Quality pork liver is delicious andA useful by-product. From it you can prepare a variety of dishes - from pates to pies and casseroles. To the pork liver is not bitter, you need to remove all the bile ducts from the raw product, and add seasonings and spices during cooking.

- Ingredients for 4 persons:
- - 150 g of butter-
- - 500 g of porcine liver-
- - 6-8 spoons of flour-
- - 100 g of smoked bacon-
- - a small onion-
- - 200 grams of any salad (iceberg or romaine) -
- - 150 g of frozen green peas-
- - 300 ml of chicken broth-
- - 2-3 spoons of crushed mint leaves-
- - a pinch of powdered sugar (or to taste) -
- - salt and pepper.
We put chicken broth on the fire to make it boil. Chop onion, bacon cut into small strips. The liver is cleaned of any veins and bile ducts, cut into 8 equal in size pieces, generously salted and peppered, crumbled in flour.
In the frying pan, melt butter, as soon as it starts to bubble, fry it on the liver for 3-5 minutes on each side, but not until ready. We shift the liver to the plate.
Add the bacon to the frying pan, fry for a few minutes, so that the fat is overkilled, add onions. Fry, stirring, another 2-3 minutes.
Put the salad in the frying pan, choppedIn small pieces, together with green peas. We pour boiling broth, return the pan to the frying pan and reduce the fire. After a few minutes we spread mint, salt and pepper to taste in the pan, add a pinch of sugar powder as necessary, mix the ingredients and remove the frying pan from the fire. Liver with broth is served on the table immediately in deep plates or bowls.
