You will need

  • Raspberry sorbet:
  • - raspberry 300 g-
  • - water 150 ml-
  • - juice 1/2 lemon-
  • - sugar 180 g-
  • - a pinch of vanilla sugar.
  • Mint ice cream:
  • - cream 20% 700 ml-
  • - yolk 4 pcs-
  • - sugar 120 g-
  • - mint 6 sprigs-
  • - chocolate crumb 2 tbsp.

Raspberry sorbet

For a raspberry sorbet in a sauté pan, pour in water,Add sugar and vanilla sugar and put on medium heat. Bring to a boil and cook, without stirring, about 7 minutes. Allow to cool completely. Raspberries are cleaned, washed, dried and ground in a blender and strain to remove pits.


Raspberry puree and lemon juice combine with syrup,to stir thoroughly. Pour the sorbet into a plastic container and put in the freezer for 3-4 hours until it freezes completely. Take the sorbet from the freezer and mix every 30 minutes. Serve on a table in kremankah or glasses, decorating with mint leaves.


Mint ice cream

With a sprig of peppermint cut the leaves and chop them intoBlender with 50 ml of cream to a state of gruel. Heat the remaining cream. Whisk the yolks with sugar to a light creamy mass. Without stopping to whip, pour a mint mixture into a thin trickle, then cream.


Pour the yolk-cream mixture into a saucepan andHeat on low heat (but do not boil) until the mass thickens. Let cool, add the chocolate chips and mix. Put in the freezer for 4 hours.
